I am going to buy new tires - Nitto Terra Grapplers A/T - My question is will P285/75R16 fit on a 16x6.5" factory rim that came on the truck. I have 2001 Silverado 1500HD 4x4 with a leveling kit on it.

I don't see why it wouldn't. You can go up to about a 10.5" width wheel before you start to see problems.

That tire is probably a little to wide for that wheel. I was at a tire shop recently and the tires places are really beginning to get strict with what they will mount up. The general rule is you do not want to go with a tire that is more than 4" wider than the rim width. The 285/75 is about a 11.5 wide tire. I was talking to them about ruinning some Toyo M/T in a 37x13.50 on my 18x8.5 wheel and they told me no they would not mou8nt them for me becasue I should not be running a tire that wide with my wheel combo. And sevral tire places told me this. Not sure if it is a Ca. thing but one place i do lots of business with said it was due to the whoel Firestone /Ford issues.

i definitely wouldnt run that tire with the wheels

for a 6.5 wide i would size down to the 265/75R16 or buy new rims

you should put 265/75R16 on 6.5.
your rim is too thin for 285/75 R16
from my personal experience, those 265 will fit perfectly.
